When I am full swing into my cycling season and riding a lot after work this recipe works very well for me because I can throw it in the oven once I get home and by the time I get my bike gear stowed and finish getting a shower it is close to being ready to eat. During the cycling season I will eat all the green beans and the entire fillet but during the off season I will make two meals out of this.

FISH
I use one frozen haddock fillet, which I purchase from the Reedsville Seafood Company, typically I will put it on a piece of aluminum foil so I can wrap it around the fish. I drizzle olive oil over the fish and add seasoning. For this version I just sprinkled my herbs de provence blend with lavender that I purchased at the Peace Valley Lavender Farm. I will also add salt and pepper. I bake in the oven at 400º for 40 minutes you have to watch the fish and can adjust the time for your taste as I tend to cook mine longer than most.

GREEN BEANS WITH ALMONDS
Take one can of green beans, can be regular cut or French cut, drizzle with olive oil and add salt, pepper and any seasoning you like, again in this version I used the herbs de provence blend. Bake at 400º for 40 minutes stir occasionally then about 10 minutes before time is up add the almonds.

Another variation for the fish is to drizzle it with Italian dressing, again wrapping it in the foil packet so that you can open it will cooking to check if it is done cooking.

Located at 20 N. Main Street, Reedsville, PA 17084, (717) 667-6084. www.reedsvilleseafood.com Wednesday-Saturday (at least at the time of this posting) they offer breakfast, lunch and dinner. They drive a refrigerated/freezer truck to Maryland to ensure their fish is as fresh as possible so they do not have to rely on other sources and run the risk of time and temperature abuse with the products they sell. I have mostly just purchased haddock and salmon from them but they offer much more and I have never been disappointed with the taste/quality of the fish. They also offer catering services and have sandwiches, pastries, side dishes available for sale. The other day I stopped by and tried the orange blossom french toast. The price was $7.00 for three pieces of french toast, with a local sausage (which I typically don’t like sausage but it was good), and home fries that were cooked with green peppers and red onion. I would again order this dish. I forgot to take a photo of the outside, but next time I am in the area I will take one so I can post it as well.

I highly recommend this book, Dusty Shoes, Rolled-Up Sleeves and other Signs of Life – Back to the Basics of Authentic Christianity by David Jeremiah. I think it is easy to become a stale Chrisitan that we so often hide our light to the world. This book helps to motivate/encourage how we should live and act and reach out to others. If you do not like to read a lot, you are in luck because it is written so that there is a daily reading for forty days. Each reading only amounts to a few pages. When I first read this book it had a huge impact on me and recently I have been struggling with some personal circumstances, knowing that through my struggles I still need to allow my light to shine and show my joy of salvation to the world. This book, once again, is helping me to do just that. So, if you are looking for something to motivate you in your Christian walk then I recommend this book for you.

Tracy http://blossomhollow.com <![CDATA[Where are all the single Christian men?]]> http://blossomhollow.com/?p=283 2010-02-14T20:41:26Z 2010-02-14T20:41:26Z A couple years ago I found myself in a situation where I was visiting many different churches with my family and while the most important part was finding a church that matched well with our beliefs, part of me hoped to find a church with many single Christian men but it has astounded me as to how few single men actually go to church. Why is this? I want to be clear, we didn’t just go to one or two churches locally, sometimes we drove an hour or more to try a church and typically we went back more than once to the same church to get a true feel for it and it just seemed that each time the single Christian men were not to be found. If any single Christian man does happen to read this and is not attending church I want to encourage you to go. There are single Christian women out there that are looking for a Godly man that is not afraid of his faith. Why is it that only once the men are married will they go to church? I am curious what it is like elsewhere but I feel, at least in the area where I live, that this is a problem and think we need to pray for younger men to have a willing heart to attend church.

That being a Christian is merely a word without any meaning behind it. Choosing to live our lives to satisfy ourselves with no concern as to whether or not we are truly walking with God or caring the least bit about the manner in which we impact other people’s lives.

It seems that we grow more and more to accept and desire the ways of society instead of the ways of God. I used to be this way, not that I now consider myself to be perfect, I certainly have my faults and need my fair share of encouragement and refining, but there was a time in my life where I professed myself to be Christian with rarely ever taking the time to read my bible, my prayers for the most part were selfish, meaningless and repetitive, I lived my life more to please myself, and even at points questioned the existence of God. Several years ago I began to make an effort to read my bible, not in a meaningless manner but with discipline to set aside time for God to learn about God and you know what, I discovered many, many areas in which I had failed God. I am saddened to think of how I have negatively impacted the lives of many individuals by professing myself to be a Christian and yet was so careless and thoughtless in my demeanor. God truly does offer forgiveness of our sins when we repent and turn from wrongful living. There are many scriptures that can be used to support this but I want to share the following one with you.

Ezekiel 18:19-32 19 “Yet you say, ‘Why should the son not bear the guilt of the father?’ Because the son has done what is lawful and right, and has kept all My statutes and observed them, he shall surely live. 20 The soul who sins shall die. The son shall not bear the guilt of the father, nor the father bear the guilt of the son. The righteousness of the righteous shall be upon himself, and the wickedness of the wicked shall be upon himself. 21 “But if a wicked man turns from all his sins which he has committed, keeps all My statutes, and does what is lawful and right, he shall surely live; he shall not die. 22 None of the transgressions which he has committed shall be remembered against him; because of the righteousness which he has done, he shall live. 23 Do I have any pleasure at all that the wicked should die?” says the Lord GOD, “and not that he should turn from his ways and live? 24 “But when a righteous man turns away from his righteousness and commits iniquity, and does according to all the abominations that the wicked man does, shall he live? All the righteousness which he has done shall not be remembered; because of the unfaithfulness of which he is guilty and the sin which he has committed, because of them he shall die. 25 “Yet you say, ‘The way of the Lord is not fair.’ Hear now, O house of Israel, is it not My way which is fair, and your ways which are not fair? 26 When a righteous man turns away from his righteousness, commits iniquity, and dies in it, it is because of the iniquity which he has done that he dies. 27 Again, when a wicked man turns away from the wickedness which he committed, and does what is lawful and right, he preserves himself alive. 28 Because he considers and turns away from all the transgressions which he committed, he shall surely live; he shall not die. 29 Yet the house of Israel says, ‘The way of the Lord is not fair.’ O house of Israel, is it not My ways which are fair, and your ways which are not fair? 30 “Therefore I will judge you, O house of Israel, every one according to his ways,” says the Lord GOD. “Repent, and turn from all your transgressions, so that iniquity will not be your ruin. 31 Cast away from you all the transgressions which you have committed, and get yourselves a new heart and a new spirit. For why should you die, O house of Israel? 32 For I have no pleasure in the death of one who dies,” says the Lord GOD. “Therefore turn and live!”

God does not want any man to die and when a righteous man chooses to turn his back and live in sin he will die in sin and when a sinner chooses to repent and live right according to God, he shall live.

Another passage that I want to share with you is the parable that Jesus tells about the sower and the soils. Luke 8:4-15. “4 And when a great multitude had gathered, and they had come to Him(Jesus) from every city, He spoke by a parable: 5 “A sower went out to sow his seed. And as he sowed, some fell by the wayside; and it was trampled down, and the birds of the air devoured it. 6 Some fell on rock; and as soon as it sprang up, it withered away because it lacked moisture. 7 And some fell among thorns, and the thorns sprang up with it and choked it. 8 But others fell on good ground, sprang up, and yielded a crop a hundredfold.” When He had said these things He cried, “He who has ears to hear, let him hear!” 9 Then His disciples asked Him, saying, “What does this parable mean?” 10 And He said, “To you it has been given to know the mysteries of the kingdom of God, but to the rest it is given in parables, that ‘ Seeing they may not see, And hearing they may not understand.’[b] 11 “Now the parable is this: The seed is the word of God. 12 Those by the wayside are the ones who hear; then the devil comes and takes away the word out of their hearts, lest they should believe and be saved. 13 But the ones on the rock are those who, when they hear, receive the word with joy; and these have no root, who believe for a while and in time of temptation fall away. 14 Now the ones that fell among thorns are those who, when they have heard, go out and are choked with cares, riches, and pleasures of life, and bring no fruit to maturity. 15 But the ones that fell on the good ground are those who, having heard the word with a noble and good heart, keep it and bear fruit with patience.”

Here also is Jesus’ explanation of the parable from Matthew 13:18-23. 18 “Therefore hear the parable of the sower: 19 When anyone hears the word of the kingdom, and does not understand it, then the wicked one comes and snatches away what was sown in his heart. This is he who received seed by the wayside. 20 But he who received the seed on stony places, this is he who hears the word and immediately receives it with joy; 21 yet he has no root in himself, but endures only for a while. For when tribulation or persecution arises because of the word, immediately he stumbles. 22 Now he who received seed among the thorns is he who hears the word, and the cares of this world and the deceitfulness of riches choke the word, and he becomes unfruitful. 23 But he who received seed on the good ground is he who hears the word and understands it, who indeed bears fruit and produces: some a hundredfold, some sixty, some thirty.”

Where are you in this parable? Has the word of God been preached to you and yet you choose not to believe or don’t understand? Have you received the word of God but are going through a rough period and are giving up or already have? Have you received the word of God but desire this world over God’s and make no effort to spread the word of God? Where are you? The first time I read this that it truly sank in to me (and even now) I can see myself at each stage. When it gets tough wanting to give up but we must persevere. We must make the effort to create a relationship with God because when we don’t we are not fruitful, we do not glorify God. If you don’t understand the word of God pray and ask him to give you understanding. People read people and if you are professing yourself to be Christian but not living your life in a manner in which God would be pleased you are negatively influencing those around you. If you are not reading your bible how do you know the ways of God? Nothing is impossible with God so if you need help, ask him.

Faith without works cannot be called faith. Faith without works is dead – read the book of James (it’s short). Please, I encourage all Christians to not just profess yourself as being a Christian but to live as being a Christian. I hate to think where I would be today had my life not changed and one day we will all be held accountable for our actions. Only by repenting and accepting Jesus into our lives can we be saved. John 3:16 “For God so loved the world that He gave His only begotten Son, that whoever believes in Him should not perish but have everlasting life. 17 For God did not send His Son into the world to condemn the world, but that the world through Him might be saved.” If you have asked Jesus into your heart and do not allow works to come forth from your faith you are spiritually dead. Where are you at in your walk with God? It’s not too late to turn back to God if you have walked away, ask for forgiveness and for God to restore you and please make an effort to read your bible, you don’t know what you are missing.

If you have not asked Jesus into your heart and would like to then pray this prayer:
Lord, Jesus, I know that I am a sinner. I know that I have sinned against you and others. I am sorry. I believe you are the Son of God who died for me. I believe that your blood cleanses my sins. Forgive me, I pray. I trust you as my saviour. Come into my heart today and make me a new person. Send your Holy Spirit to guide me and help me to grow in faith daily. Amen.

Typically we do not make it using the full amount of red food coloring. If you choose to cut back on the red food coloring you will need to add water for the amount of red food coloring you don’t use (so if you use one ounce of coloring you will still need to add one ounce of water).

Cake Batter
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 oz red food coloring
2 level tablespoons of cocoa
1 teaspoon salt
1 cup buttermilk
2 1/4 cups flour
1 tablespoon vinegar
1 teaspoon baking soda

Beat the shortening, sugar, eggs, food coloring, cocoa, salt, buttermilk and flour to create batter. Then mix together the vinegar and baking soda then stir into the batter – do not beat. Pour the batter into two 9-inch round pans that have been greased and floured. Bake at 350 degrees for 30 minutes. Insert a toothpick into center of cake to check if it fully baked. If batter sticks to the toothpick it is not ready to be removed from oven.
Once removed allow the cakes to cool for about five minutes an then turn cake out onto wire cooling racks.

Icing
1 cup sugar
1 cup crisco
1 cup milk
5 scant tablespoons of flour (do not use cornstarch)
1 teaspoon vanilla

Beat together the sugar and crisco. Then cook the milk and flour until thick; allow it to cool and then blend in the sugar and crisco mix. Stir in the vanilla. Spread on to cooled cake.

Very easy to make and it’s not hard to try to remember the ingredients.

1 cup crushed pineapple
1 cup miniature marshmallows (if my memory serves me correctly she always used the colored variety pack)
1 cup shredded sweetened coconut
1 cup mandarin oranges

If you make it for a pot-luck dinner be prepared to give the recipe because someone will ask you for it. When buying the bok choy try to get one with lots of greens and it shouldn’t be wilted. If you are eating this over several days I recommend keeping the toasted noodle/almond mix in a separate container then just add them as you eat the salad. If you mix it all together then refrigerate it the noodles will get soggy and past one day I don’t like to eat it that way. My sister-in-law loves this recipe and I hope you will too!

1 large bok choy
2 packages of ramen noodles (throw away the flavor packets)
3-4 Tbsp butter or oil
4 oz. sliced almonds
2 Tbsp toasted sesame seeds

Dressing
1/4-1/2 cup sugar
1/4 cup vinegar ( I always use balsamic vinegar)
1/3 cup oil
2 Tbsp soy sauce
1 tsp toasted sesame oil

Mix the dressing ingredients, stir well and refrigerate. Chop the whole bok choy, cutting the stems into 1/2” chunks, chop the scallions including green and refrigerate. This part can be done ahead of time, but as I mentioned earlier, as long as you keep the topping in dry storage and don’t add until ready to eat it will be okay.

In skillet with butter, saute crumbled ramen noodles and almonds. Watch very carefully you want them to be uniformly browned but not burned – stir constantly. Remove from pan and cool slightly. It will get very hot. I recommend using a pan with deep sides or even using a pot to make it easier to stir without having to worry about the pieces going on the floor.

Mix together with the bok choy and scallion mix and sprinkle with sesame seeds.

Add the dressing right before serving. Toss well and enjoy!

There is plenty of room for adaptation with the filling and I have changed the ingredients and the amounts with success every time. Because I do everything to taste with this particular recipe I do not have measurements for some of the ingredients. Start by making the dough first so that it has time to rise while you are making the filling.

Dough:
1 tsp salt
3 1/4 cup flour
1 Tbsp Sugar
1 package rapid rise yeast

1 Tbsp butter
1/2 cup water
1/2 cup milk

Combine the dry ingredients in a mixing bowl. Heat the water milk and butter. You only want to heat this to where it is warm to the touch, once it reaches this point I take it off the heat to allow the butter to finish melting. Then create a well in the flour mixture and pour the warm liquid into the well. Mix and then kneed for 5 minute. The dough will be smooth and elastic. Roll the dough out to a rectangular shape to fit on a 12 x 15 1/2 cookie sheet. You can sprinkle some corn meal onto the sheet (optional) then transfer the dough to the sheet and allow to rise while you make the filling.

Filling:
3/4 pound ground beef
Green peppers
Onion
Chili powder
Garlic salt
White pepper (optional)
1 8 oz. can tomato sauce
Shredded cheese (recommend Mexican blend or cheddar)

Brown the meat and add the peppers and onions and allow to cook. Add the spices and once the onions and peppers have had a chance to cook add the tomato sauce. Transfer the filling to the dough – you want to create a line down the middle with equal amounts of dough exposed on both sides. Cover the dough with the shredded cheese basically I just use one or two handfuls but again this can be adjusted to your taste. Using a knife, cut approximately one inch strips in the dough along both sides of the filling. Braid the dough overlapping alternate strips of the dough until the entire loaf has been braided.

You can coat with an egg wash but it is not necessary. Bake at 400º for 20 minutes allow to cool slightly and cut in approx. one inch increments and enjoy.
